Overnight Oats: 2 ways {So Delicious and Go Dairy Free March Recipe Madness Contest!}

The time has come for me to admit that I have become a hardcore snooze-button pusher lately.  Remember my days of waking up before the sun to run 8 miles before work? Ya, it’s hazy for me too.  I have become quite the night owl these days & enjoy my 10:30 PM pajama yoga & 3 minute plank attempts with my Mom.

Signing up for an 8 AM class was like deciding to run totally naked in the snow- painful & unnecessary.  Not that I have ever even really seen snow fall…

Okay.  So, the point of this strange beginning was for me to share a delicious little breakfast of champions with you.   I have figured out the exact time (7:17) that I can wake up and still arrive on time for my 8:00 class & with this breakfast, I even get to eat!

Huge shout out to my BFF & her twin for inspiring me to try overnight oats again.  I have attempted 5 different recipes & will share them with you when I decide each is worthy.

Introducing two dairy free, So Delicious, Overnight Oat Recipes:

CHOCOLATE COVERED STRAWBERRY OVERNIGHT OATS

&

CHOCO-BANANA-COCONUT OVERNIGHT OATS

GLUTEN FREE, DAIRY FREE, & ABSOLUTELY DELICIOUS!IMG_3054

 Chocolate Covered Strawberry Overnight Oats:

Ingredients:

-1/2 cups oats

(I used quick cooking, rolled, gluten free oats)

-2/3 cup chocolate almond milk

(I used 1/3 cup unsweetened & 1/3 cup regular choco almond milk)

-1-2 tbsp chia seeds

-1/4 cup SO DELICIOUS brand Dairy Free Yogurt

(unsweetened or plain cultured coconut milk yogurt or plain greek cultured almond milk yogurt– both taste delicious!)

-3 diced strawberries

-1 tbsp agave or maple syrup

*Toppings:

-1 sliced strawberry

-unsweetened cocoa nibs

Instructions:

1) Place all ingredients (oats, almond milk, chia seeds, dairy free yogurt,  diced strawberries, & maple syrup or agave) into a glass jar. Then, stir well.

2) Add the toppings to your jar of oats: 1 sliced strawberry & a sprinkling of unsweetened cocoa nibs

3) Cover your jar or container and refrigerate overnight or for at least 4 hours.

4) The next morning: enjoy your 20 minutes of extra sleep, stumble to the kitchen, open jar of overnight oats & enjoy!

Choco-Banana-Coconut Overnight Oats:

Ingredients:

-1/2 cups oats

(I used quick cooking, rolled, gluten free oats)

-2/3 cup chocolate almond milk

(I used 1/3 cup unsweetened & 1/3 cup regular choco almond milk)

– 1 diced, ripe banana

-1/4 cup SO DELICIOUS brand Dairy Free Yogurt

(unsweetened or plain cultured coconut milk yogurt or plain greek cultured almond milk yogurt)

*Toppings: 

 – 1/2 sliced, ripe banana

– unsweetened, shredded coconut

– unsweetened cocoa nibs

Instructions:

1) Place all ingredients (oats, almond milk, diced banana, & dairy free yogurt) into a glass jar. Then, stir well.

2) Add the toppings to your jar of oats: 1/2 sliced banana, a sprinkling of unsweetened shredded coconut & a sprinkling of unsweetened cocoa nibs

3) Cover your jar or container and refrigerate overnight or for at least 4 hours.

4) ENJOY!

I have a tendency to get into food ruts & eat the same boring thing over & over again.  These little jars of goodness have totally helped me mix it up.  As my friend Kelly said “You really can’t mess these up”— MY KIND OF “COOKING”.

  1. LOVE overnight oats! I use oats (uncooked), non-dairy milk, 1 banana, 1 tsp of vanilla extract and dark chocolate cocoa powder. Can’t wait to try these two recipes!
