Because you rock, no bake vegan fudge brownie bites

Hi there!

Hope you’re having a good Tuesday.  I thought you might need a little first-day-back-to-work-after-long-weekend pick me up!  Of course, I want to truly NOURISH you, not fill you with crap and then let you crash.  SO, here you have it-

“Because you rock, no bake vegan fudge brownie bites” AKA “B.Y.R. brownie bites”

Ingredients:

1 cup raw cashews and almonds (Recipe called for walnuts which I didn’t have, so I improvised.  Worked like a charm!)

1 cup pitted Medjool dates

1/2 cup Navitas Naturals Cacao Powder

pinch sea salt

Sprinkle (or as many as you like) Cacao Nibs- I used Scharffen Berger Nibs

**Optional ingredient: Pure vanilla extract (I used 2 teaspoons)

Steps:

1) Grind nuts in a food processor or high powered blender until a coarse “flour” is formed

2) Add dates, cacao powder, salt & vanilla to “flour” mix. Process again until a moist dough is formed.  (it should be able to stick together if pressed between your fingers)

3) Pour brownie batter into a bowl or pan and sprinkle with cacao nibs

4) Roll bites into small balls

** I stored my bites in the fridge and enjoyed them when they were cold**

** You can also freeze these babies for when a sweet tooth hits**
